What?? Who the heck figured out how to make coffee do this?? It’s genius. It’s art. It’s tasty, and smells divine. This espresso was made on a 19 year old Starbucks Barista machine, with a bottomless portafilter. It was a pretty much perfect shot, and it tasted deep, rich and head spinningly perfect. This even cascade of gold doesn’t happen all of the time though. The coffee needs to be fresh, the grind just right, the tamp flat and tidy, and the gods happy with your past two weeks of public service and recycling efforts. It’s art, and science. And good fun.
